Healthy Recipe of the week:

Sweet potato and veggie Naan pizza

This is a easy, yummy recipe that utilizes any leftover veggies in your fridge. It combines a bunch of healthy ingredients while being served on a toasted Naan bread covered in hummus. Delish!

Directions: Sauté veggies in a pan with your preferred healthy cooking oil. Boil egg on stovetop till cooked. Peel egg out of shell and cut in half. Toast Naan bread for 10 minutes on 350 in oven after sweet potatoes are cooked. Spread hummus on toasted Naan break evenly. Place veggies in sections on top of the hummus, lay egg half’s on top. I sprinkled mine with my favourite seeds and feta cheese. Enjoy! Here’s what veggies I used:

  • Naan bread
  • Hummus (I prefer the red pepper one but plain is good)
  • button mushrooms
  • Your preferred healthy oil
  • Spinach
  • tomatoes
  • Red onions
  • Egg
  • Sweet Potato; cut in bit size pieces without skin
